Spinach Salad with blue cheese, walnuts, bacon and avocado

This salad came to me as a bit of a happy accident when the husband threw away the bean sprouts I was hoping to add to what would have been a Love Salad (google it, it’s epic). I was terribly put off with the prospect of not being able to eat my Love Salad for dinner but alas, this great salad ended up in its place. This is quite a protein packed meal-type-salad, which did not compliment the huge burgers I served it with but no matter, it’s a really great combination of flavours and textures. We are spoilt for avocado here in Queensland, and if you can find them, Shepherd Avocados really are the best.

Ingredients:

1 packet fresh spinach greens

5 rashers bacon, cooked to crisp and crumbled

1/2 cup walnut pieces

1 avocado cubed

3/4 cup cubed Blue Cheese

Directions:

Build the salad starting with salad and layering the walnuts, avocado, blue cheese and topping with crumbled bacon.

Serve with your favourite vinaigrette dressing or try Pomegranate Molasses Dressing.
