Black Bean Cauliflower Veggie Burgers

Cauliflower is such an awesome ingredient, and it’s even more versatile when made into “rice” – the easiest way is via your kitchen mixer or Cuisinart. Just break raw cauliflower into florets, and pulse your mixer until the cauliflower is broken down into small pieces the size of cooked rice granules.

This recipe is full of fibre and raw veg, making it super filling and great for people trying to stay away from red-meat burgers. You could easily make these patties into a kofte shape and serve them inside a pita or other flatbread.

Ingredients:

2 cans black beans, rinsed and drained

1 cup cauliflower “rice”

1 egg

1/2 cup panko breadcrumbs

1/2 cup rolled oats (instant or old fashioned)

1 tablespoon paprika

1 tablespoon cumin

1 tablespoon garlic powder

1 teaspoon salt

Directions:

Make cauliflower rice by breaking an entire head of cauliflower into florets and placing in a kitchen mixer using the pulse function to ensure all florets are broken into even sizes.

Cauliflower will look like this and you will have about 4 cups depending on the size of your cauliflower.

Combine 1 cup of cauliflower rice and all remaining ingredients in a blender and run the blender until a smooth consistency has formed – about 30 seconds.

Form into patties and cook on an oiled pan at medium heat for approximately 4 minutes/side.
