Pork carnitas are a truly economical, tasty and versatile dish that can be made keto if desired. I love the smell in the kitchen when the pork gets simmering in its own juices, melding with spices and seasonings. Serve over rice, salad or in a wrap. Pork loin is one of the cheapest cuts out there and can feed a family for several meals.

Ingredients:
1.5-2kg portion boneless pork loin – also called “butt”
Juice of one lime
3 tablespoons honey (optional)
1 tsp cinnamon
3 tsp ground cumin
5 garlic cloves pressed or minced
2 tablespoons olive oil or coconut oil
2 teaspoons sea salt
Directions:
Preheat oven to 300F.
Trim pork loin of excess fat, discarding the thick fat layer. Cut into 2 inch thick cubes (approximately) and place in a bowl.
Combine remaining ingredients in a bowl and stir. Pour marinade over pork and return to fridge for 1-3 hours. You can skip this step if you’re low on time and place the meat and marinade in a baking dish covering tightly with aluminium foil (or in a Dutch oven with the lid on).
Cook at 300F for 2.5 hours. Remove foil and place under broiler to crisp edges, making sure to spoon cooking juices over meat prior to returning to oven.
