Fried fish sandwich

I had some great news at work today (despite feeling the Thursday blahs and nursing a horrible headache), so I needed some easy dinner plans. But I also needed a meal that would pick me up: impossible task you say? How about a breaded fish filet, smothered with some zesty mayonnaise, topped with crunchy iceberg lettuce? The filet-o-fish is the only thing I eat at McDonalds (eaten only when in desperate situations – yes i’m a food snob). I believe this version is an improvement on the Maccas offering: ticking all the boxes of texture, taste, ease of preparation. You hardly need a recipe to pull this off but here’s one anyways.

Ingredients:

2-3 filets of boneless whitefish (basa, halibut)

1/4 cup flour

1/2 cup Panko breadcrumbs

1 egg

1/2 tsp salt

1-2 tablespoons olive oil

Mayonnaise

Lettuce

Seeded hamburger buns

Directions:

Salt fish on both sides lightly. Place flour, scrambled egg and panko on separate plates. Dredge filets in flour first, shaking off excess. Next dredge in egg, and finally finish with panko.

Heat olive oil in heavy bottomed skillet and bring to medium high heat. Add fish filets and cook until browned on both sides.

Place on buns with lettuce and sauce and enjoy!
