This is the type of food where the contradictions inherent in my humanity show themselves. Sure I’d like to maintain a normal BMI, but do I want that more than I want Banana Tiramisu. No! I definitely want Banana Tiramisu more than I want to be thin. This is a bit like a trifle, which uses ladyfinger biscuits for the cake and is layered with vanilla pudding, fresh bananas and cold whipped cream. Hopefully you have some family members to share this with you as it is quite addictive.

Serves 10
Ingredients:
2 cups whipping cream
1 can sweetened condensed milk
1 1/2 cups water
3-4 bananas, sliced
10-14 Ladyfinger biscuits (Savoiardi biscuits)
1 packet instant vanilla pudding (100g)
Nutmeg (grated)
Directions:
In a bowl, beat condensed milk and water – make sure water is as cold as possible. Add instant pudding mix and use a spatula to scrape sides of bowl. Place bowl in fridge and cool for 45mins.
After pudding has set, beat whipping cream until peaks form. Gently, with a spatula, fold the whip cream into the pudding. Slice bananas evenly.
In a trifle bowl or other large container begin to layer 1/3 of the pudding/cream mixture, then add a layer of biscuits across the pudding, then add a double layer of bananas. Make sure the ladyfinger biscuits and bananas go to the sides of the bowl. Continue with the second layer of pudding/cream, biscuits and bananas. At the third pudding layer, stop, so that pudding is the top layer.
Place in fridge to set for 4-6 hours. Sprinkle with crushed ladyfinger biscuits and ground nutmeg to serve.
