Starting with quality cocoa is key here, as it will yield a rich flavour, that melds well with the nutty Nutella. I far prefer cocoa brownies over those that use real chocolate as I never have bars of cooking chocolate hanging around the pantry. I also find that cocoa creates a more chocolatey product. These are a great addition to the repertoire, and are best served with a glass of milk.

Yields 8 brownies
Ingredients:
1/2 cup cocoa
3/4 cup sugar
1/2 cup sugar
3 tablespoons Nutella
1/4 cup flour
2 eggs
1 teaspoon vanilla extract
Directions:
Preheat oven to 350 F.
In a microwave-proof bowl, melt butter and cocoa (30 seconds on high). Add sugar and whisk well. Add eggs and vanilla and beat well. Next beat in flour.
Grease a square cake pan (9 inch square) and add batter. Add a 1 tablespoon dollop of Nutella and use a fork to spread throughout the mixture. Repeat with the other 2 tablespoons of Nutella.
Bake for 10-12 minutes ensuring not to overcook as brownies are best when slightly soft in the centre.
