Braised Cauliflower

Ode to simplicity, a light meal or side dish. Many vegetables can be prepared this way. No need to smother on the cheese sauce or bacon, just a simple veg highlighted by classic flavours.

Ingredients:

1 head cauliflower cut into florets.

2 tablespoons tomato paste

2 cups vegetable or meat stock

2 tablespoons chopped parsley

2 garlic cloves

1 tablespoon olive oil

Directions:

Place oil and garlic into saucepan and fry at medium heat for two minutes. Add the tomato paste and cook for 1 minute. Add cauliflower florets and stock and bring to a boil. Braise until cauliflower is tender – or until desired doneness is reached.

Adjust seasonings and sprinkle with parsley.
