What 9 year old girl wouldn’t love a homemade cake in the shape of a kitty for her birthday? I got this recipe from Recipe Tin Eats their “Best Vanilla Cake” which is based on Japanese methods for cake making. Yes it calls for 4 eggs, but it really was hands down the best cake I have ever made for a birthday party.
Ingredients:
2 cups plain / all purpose flour
2 1/2 teaspoons baking powder
1/4 tsp salt
4 large eggs (50 – 55g / 2 oz each), at room temp
1 1/2 cups caster / superfine sugar
115g / 1/2 cup unsalted butter , cut into 1.5cm / 1/2” cubes (or so)
1 cup milk , full fat (Note 5)
3 tsp vanilla extract
3 tsp vegetable or canola oil

Decorations:
After frosting with my a double batch of my Cream Cheese Frosting I went all out and decorated the border with M&Ms and gummy koalas. I then went on to sprinkling orange and yellow sprinkles to simulate fur, using a Toblerone triangle for the nose and gummy strings for whiskers. Play around, have fun, and don’t hesitate in buying that kitty cat cake tin. I’ve used mine for 3 birthdays now, the joy never seems to fade.

Such a lovely cake! Lots of love went into it! And yes invest in some cake pans and decorating tips for icing! It is fun and creative and the cakes taste so much better when made from scratch. I think that this recipe would make good cupcakes too!
