    Spaghetti and Meatballs

    Spaghetti and Meatballs

This recipe is an adaptation of Mark Bittman of the NYTimes’ Spaghetti and Drop Meatballs. It’s quite a bit different, since the real conundrum with this recipe is the problem of how to cook the meatballs (baked in oven before dropping into sauce? cooked in the sauce? seared in a pan with the sauce made…

Cauliflower Leek Soup with frizzled leek greens

Cauliflower Leek Soup with frizzled leek greens

A great alternative to the traditional potato leek soup this one is keto friendly, vegan, high protein and can be served as an appetiser, or as the main course. Fried leeks can be scattered over the top of the soup to give a crunchy texture and smoky taste. Nutritional yeast gives an amazing cheesy flavour…

    Orecchiette with sausage and broccoli

    Orecchiette with sausage and broccoli

This is the recipe that upped my pasta game: cooking dry pasta in the sauce! Game changer. I’ve also got a bit of a thing for this funny shaped pasta that I can’t pronounce. It reminds me of little suction cups or little fairy-sized soup bowls that gather the sauce and dispense it in small…

    Peach macadamia salad with mint

    Peach macadamia salad with mint

Fruit salads for dinner – genius. With this Gold Coast summer that keeps pumping heat into the mid 30s I really have no appetite by the end of the day. Luckily Australia is still producing peaches this late in the season. I may also have a couple watermelon plants if temperatures stay this way –…

    Chocolate chip banana muffins

    Chocolate chip banana muffins

There’s something nostalgic about chocolate chip muffins. Hot out of the oven with a warm glass of milk they really hit a nerve. These can be made with regular milk but I have a weak spot for buttermilk. Be sure to chop your own chocolate- the results are better than using pre-bought chips. Makes 24…

    Sheet pan chicken shawarma

    Sheet pan chicken shawarma

This is really good and super easy – makes me wonder why I don’t marinate chicken thighs more often. Feel free to throw in some green and red peppers at the end – they would compliment the onion nicely. Serve beside rice, or throw into a pita stuffed with hummus and tzatziki and some sliced…

    Apple-cashew Oatmeal with Chia

    Apple-cashew Oatmeal with Chia

Brain food is so important for little kids: growing their bodies, pathways in their brains, constantly burning energy as they use their brains to learn. It’s almost criminal that food companies are allowed to advertise high fructose breakfast foods to the youngest members of our community. My kids just love this slightly sweet and creamy…

Trout parcels with sage butter and garlic

Trout parcels with sage butter and garlic

Trout is a lovely fish and a nice alternative to salmon when you’re craving a meatier, pink fish. This turned out nicely in the oven however overcooking fish is my Achilles heel. Just make sure to not overcook it. I have nightmares of Gordon Ramsay yelling at me “Don’t overcook the fish!” – no idea…

    Traybake BiBimBap

    Traybake BiBimBap

You could hardly call this authentic, but there is something about the simplicity of marinated, ginger infused baked veg, thinly sliced beef, and some Kim chi served over a heaping mound of sticky sushi rice. As my first foray into bibimbap, I found the traybake version very easy, and I used the same tray and…

    Breakfast Channa Dal

    Breakfast Channa Dal

You should never constrain yourself to eating pulses only for dinner or lunch. Channa dal curry is so easy to make for breakfast it’s really quite sad that the average Aussie child doesn’t get a flush of neuron-building Turmeric in the morning as their “breakfast of champions.” The trick with pulses is to salt them…

    Pork Carnitas

    Pork Carnitas

Pork carnitas are a truly economical, tasty and versatile dish that can be made keto if desired. I love the smell in the kitchen when the pork gets simmering in its own juices, melding with spices and seasonings. Serve over rice, salad or in a wrap. Pork loin is one of the cheapest cuts out…

    Fried fish sandwich

    Fried fish sandwich

I had some great news at work today (despite feeling the Thursday blahs and nursing a horrible headache), so I needed some easy dinner plans. But I also needed a meal that would pick me up: impossible task you say? How about a breaded fish filet, smothered with some zesty mayonnaise, topped with crunchy iceberg…

Crispy Kim chi rice with coddled eggs

Crispy Kim chi rice with coddled eggs

Kim chi is an acquired taste but chopping it into a blanket of steamed rice seasoned with sesame oil makes it much more palatable. This is a lovey midweek dish – it comes together in under an hour. Add some chopped chicken and you have a full meal. Ingredients: 1 3/4 cups white rice (dry…

    Chicken-scallion Dumplings

    Chicken-scallion Dumplings

Once you get the hang of it, making these delectable dumplings is really easy. I buy the round papers from the supermarket and don’t bother to crimp the edges or do anything fancy. Just a border of water around the edges and light pressure will make them stick. Then it’s a pan steam and fry…

    Turkey-Cheddar Burgers

    Turkey-Cheddar Burgers

Hold the bun or serve on your favourite seeded one, these are great when you want a break from red meat burgers. Lower cholesterol than beef, turkey also has a lower ecological footprint meaning you can feel better about your impact on the earth when you eat it. Full of cheddar, you can make them…
